Mardi Gras hits the Today Show — Don’t miss two chef segments!

Mark you calendars. Mardi Gras is coming to the Today Show in a big way. Within a few weeks time, two of our Naw’leans-bred chefs are going to be sharing a little Mardi Gras lovin’ with Kathie Lee and Hoda. As if you needed another reason to watch those two, right?

First up! Chef David Guas of Bayou Bakery, Coffee Bar & Eatery will be rolling out the dough on how to make the most iconic dessert for Mardi Gras season: the King Cake.

In case you don’t know, King Cake is to Mardi Gras as pumpkin pie is to Thanksgiving – the holiday just wouldn’t be the same without it. Similar to glazed coffee cake, a King Cake is more of a sweet bread than a cake, laced with cinnamon, shaped like the braid or a crown [depending on the baker], and decorated with sugar tinted the three colors of Mardi Gras: gold for power, green for faith, and purple for justice. The secret to David’s King Cake is his homemade Crèole Cream Cheese. Who from the Today Show “Krewe” will end up with the King Cake Baby? We’re taking bets! Next up! Chef Haley Bittermann of the Ralph Brennan Restaurant Group will be putting on quite a show for Fat Tuesday (Mar. 4).

Haley will be throwin’ these Today Show ma’ams some savory bites to complete their Fat Tuesday feast: Crawfish Spring Rolls with a Chili Garlic Sauce and finger lickin’ Cajun Andouille Corn Fritters with Creole Honey Mustard. It’s no secret that Hoda and Kathie Lee love a little morning libation, so to get them in the mood to dance the second line, Haley will mix up some Who Dat Lemonade before ending the morning with a sweet finish of Bananas Foster Mini Cupcakes. Drool on that.
